I’m a student at University College London and helped set up the ‘UCLU (University College London Union) Meat Free Mondays’ campaign. Our inspiration came from a desire to make UCL a greener campus. We felt that although UCL and the Union made some effort to improve their environmental impact, the impact of meat was completely left off the sustainability agenda. We wanted to raise awareness of this impact and create a positive legacy of action, not just talk. Since 2015, the Union hasn’t served meat in 3/4 of its cafes on Mondays and has significantly increased its range of vegetarian options.
